Xisto Amarelo Tinto 2021
Xisto Amarelo Tinto 2021
QUINTA DA CAROLINA
Bootles production: 1400
2021 was a very balanced year, with a very wet February followed by a dry and quiet warm spring that provided a healthy floration and a production above normal in Douro. June was quite unstable, with thunderstorms and hale, but we were very lucky that didn’t affect our vineyard, so the grapes were very healthy with an extraordinary balance between sugar and 2nd acid. Grapes were harvested on the of September of 2021.
During the picking there is an extraordinary work of selection of grapes, so when arriving the winery there is no selection and the grapes are thrown into a concrete lagar, whole bunch, and foot stomped lightly. Fermentation is spontaneous with very low levels of sulfur and with temperature control. After 3 weeks on the skins the grapes are pressed and the wine goes directly to a 50yo German oak fuder, where malolactic happens and stays over one year then passed over for another year of aging in a concrete tank for natural stabilization.
